4 Quick and Simple Vegetarian Pasta Recipes

Simple vegetarian pasta dishes offer a combination of convenience, versatility and deliciousness. By incorporating these dishes, you can enjoy a variety of flavours and have quick and simple recipes on hand throughout the week.

All four recipes have few ingredients and include the masterful ingredient of extra virgin olive oil, creating depth and balance in flavours and textures. 

1. Zucchini Pasta

This dish is a great way to incorporate more vegetables into your meal while still enjoying the comfort of pasta. The zesty lemon adds a vibrant and refreshing taste that pairs wonderfully with the mild, slightly sweet flavour of zucchini. A delightful combination which offers a satisfying texture. 

Having a favourite dish I enjoy regularly is a great way to create a sense of ease and comfort in my culinary routine. 

Once served, I personally love to top it up with a sprinkle of dried chilli flakes, toasted pine nuts and a generous drizzle of Early Harvest Extra Virgin Olive Oil for that extra depth of flavour.

2. Pasta Arrabiata

Arrabbiata is a classic Italian pasta sauce known for its simplicity. It's a perfect choice for those who enjoy a bit of heat in their dishes, although that can be tweaked to best suit your taste and spice preferences.

This dish is a staple in our home, we make it every Friday and refer to it as "Arrabiata Fridays". It's been a family tradition we've enjoyed for many years and it began because of my dad's love of pasta.

It's quick and easy to make, packed with flavour and is a great option for when you're craving a vegetarian meal.

Homemade pesto allows you to control the texture of the sauce, simply by adjusting the blending time you can make it as smooth or as chunky as you like. You also have control over the ingredients and can customise it exactly to your liking.

I personally love to make a bigger batch and use it as a spread in my tuna sandwiches for lunch!
