Extra Virgin Olive Oil
Extra virgin olive oil is the highest grade and quality olive oil available. It is the juice of the olive fruit with its water removed by centrifuge. An unrefined, all-natural product, not treated with chemicals or altered by heat as it's kept below 26 degrees celsius at all times during the mechanical extraction process.
The term "extra virgin" can only be used when an olive oil has met very specific production standards, strict chemical criteria and has a free fatty acid content of 0.8% or less. The absence of chemicals and industrial refining ensures the highest level of nutrients, aromas and flavours are preserved. High-quality extra virgin olive oils are fruity, pleasantly bitter and pungent due to the freshness of the olives.

Our Story
We are delighted to be working with local, artisan producers from Monemvasia, a town and municipality in Laconia, Southern Greece. We are from this region and both sides of our family have been involved in olive cultivation since the 1850's. Driven by this legacy we aspired to bring the essence of superior, single-origin extra virgin olive oil to the UK, sharing the rich tradition and exceptional quality that has been cherished for generations.
We recognise high-quality extra virgin olive oil and in our quest for excellence, we selected a curated selection sourced from the esteemed region of Laconia. The established reputation of our producers meant that we could meet the demands of the discerning UK market without compromising on the essence of tradition and quality that defines our heritage.

Our Producers
Phileos extra virgin olive oil is produced exclusively from olives grown, harvested and pressed in Laconia, in the region of which Sparta is the capital. The wider area of the Spartan land constitutes an ideal region for olive cultivation, attributable to the unique local microclimate and the soil's rich composition. The use of traditional techniques, sustainable cultivation practices and modern standardisation methods, ensure the unique characteristics of the olive oil produced.

Production
- Olives are harvested by hand and with the use of hand-held electric comb rakes.
- Once harvested, the olives are transported from the fields to the olive press on the same day.
- The stems, leaves and debris are separated from the olives and the olives are washed with water.
- The olives are then crushed into a paste and the olive oil is extracted via cold extraction methods, at temperatures no higher than 26°C.
- The paste is transferred to a spinning centrifuge that separates the oil from the fruit's pit, pulp and water.
- The olive oil is stored in stainless steel tanks under controlled conditions, within a standardisation unit facility. This controlled environment helps prevent the olive oil from being exposed to oxygen and humidity, and thus maintain its freshness.
- Finally, the olive oil is transferred to bottles for packaging and distribution.

- Protected Geographical Indication (PGI) Laconia certificate, pertains to the products' characterisitcs and quality which are linked to its geographical origin. The product is harvested, pressed and packaged in Laconia. A guarantee that an authentic product is being bought.
- ISO22000 certification ensures food safety management, risk control and quality optimisation.
- AGRO 2.1, 2.2 certification assures quality and safety of the product, as well as practices that respect the environment.
- The organic extra virgin olive oils are certified organic, BIO HELLAS.
- Kosher certified.
- Non-GMO verified product.
- EU Health Claim Regulation 432/2012: Certified high phenolic olive oil.
