About Us

We come from Monemvasia in the southern Peloponnese, where both sides of our family have been cultivating olives since the 1850s. Driven by this legacy, we set out to source the finest extra virgin olive oil and bring that same rich tradition and exceptional quality to the UK.

Our Source

We know great olive oil when we taste it and found exactly that in Phileos of Sparta — crafted in the same Laconian land our family has called home for generations.

Phileos of Sparta extra virgin olive oil is produced exclusively from olives grown, harvested and cold extracted in Laconia, the ancient region of which Sparta is the capital. The landscape here is ideal for olive cultivation, shaped by a unique local microclimate and a richly composed soil that has nurtured olive groves for centuries. Traditional cultivation techniques and sustainable practices are combined with modern quality controls, preserving the distinctive character that makes this olive oil truly special.

    • Olives are harvested by hand and with the use of hand-held electric comb rakes.
    • Once harvested, the olives are transported from the fields to the olive press on the same day.
    • The stems, leaves and debris are separated from the olives and the olives are washed with water.
    • The olives are then crushed into a paste and the olive oil is extracted via cold extraction methods, at temperatures no higher than 26°C.
    • The paste is transferred to a spinning centrifuge that separates the oil from the fruit's pit, pulp and water.
    • The olive oil is stored in stainless steel tanks under controlled conditions, within a standardisation unit facility. This controlled environment helps prevent the olive oil from being exposed to oxygen and humidity, and thus maintain its freshness.
    • Finally, the olive oil is transferred to bottles for packaging and distribution.
